Slow-Cooker Brisket

This is one of the most popular recipes of 2025! The slow cooker makes this traditionally labor-intensive cut incredibly easy – and it’s so tender you can eat it with a spoon! 🥩

Ingredients

  • 3–4 lb (1.5–2 kg) beef brisket
  • 2 tbsp olive oil
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 2 tsp smoked paprika
  • 1 tbsp brown sugar
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp chili powder (optional for a bit of heat)
  • 1 cup beef broth
  • 1 cup barbecue sauce (or use half BBQ + half ketchup for a lighter flavor)
  • 1 onion, sliced
  • 3 cloves garlic, minced

Option 1: Slow Cooker (Easiest)

  1. Prep the brisket: Pat it dry and rub it with salt, pepper, paprika, brown sugar, garlic powder, onion powder, and chili powder.
  2. Sear (optional but adds flavor): Heat olive oil in a large pan over medium-high heat. Sear brisket on both sides for about 3–4 minutes per side.
  3. Layer the slow cooker: Place sliced onions and minced garlic on the bottom. Put the brisket on top.
  4. Add liquids: Pour beef broth and barbecue sauce over the top.
  5. Cook low and slow:
    • Low: 8–10 hours
    • High: 5–6 hours
  6. Rest & slice: Remove brisket and let it rest 15–20 minutes before slicing against the grain. Spoon some sauce from the cooker over the slices.

Option 2: Oven

  1. Preheat oven to 300°F (150°C).
  2. Follow steps 1–4 above, placing everything in a large roasting pan or Dutch oven.
  3. Cover tightly with foil or lid.
  4. Roast for 3½–4½ hours, until fork tender.
  5. Rest 15–20 minutes before slicing.

Option 3: Bonus Tip for Extra Flavor

Finish the sliced brisket under the broiler for 5 minutes to caramelize the sauce.

Add a splash of apple cider vinegar or Worcestershire sauce to the liquid mix for extra depth.
